Cooking as alchemy

Nowadays we are living in very fast rythm and it’s so easy to create and stick to daily routine. This gives us some stability, but it’s important to leave some space for creativity and unexpected situations. In this short video Homaro Cantu and Ben Roche from Moto – a Chicago restaurant, explain how they play with food and find new ways to bring cooking into the next level.

I like to experiment with food like 99% of the population. People forget that in order to like a given flavor you must first discover it. When we are small, parents do it for us, but everyone still eats new dishes or in a different way served / made.
Modern cuisine focuses on amazing taste combinations, dishes and the use of 100% of the product. The Polish chef Amaro is a perfect example of great modern cuisine.
It is possible that I will try a few culinary ideas quoted in the video, unless I forget. It's like quarantine time and I'm even less willing to work.

1. I prefer traditional dishes. I don't really like to experiment with food. I want an easy recipe that I know works and follow it for 100%. I don't add anything that is not in the recipe. I think I'm just boring when it comes to cuisine.

2. I don't really follow modern cuisine but if it looks the same as presented in the video I hate it. It's not food, it's more art than food. I would not pay for something like this.

Answering your questions:

1. As for popular dishes, yes, I like to experiment in the kitchen with dishes, but without exaggeration. Gently. It's always something new, a new taste and an interesting culinary experience.

2. To be honest, modern kitchen doesn't convince me, because it's very fancy and weird for me. I prefer traditional dishes.

3. I do not think so. I wouldn't dare, it disgusts me a little.

I like experiments, but not that kind of. Let's say I experiment more with traditional food and the way how it is cooked.

2. What’s your opinion about modern cuisine?
I don't know what "modern cuisine" is. I usually don't eat some weird dishes, because I could be angry that I am still hungry after eating something for example.

3. Would you like to try any of the presented in the video food ideas?
Not really. I could try them, but it is not what I would be eager to do. Anyway, it is always good to try something new and see if it can be a better way to do something.

I like to try new things from time to time. More often i eat traditional dishes but when i have opportunity i love to find something new and cook it or order.

I dont like modern cuisine at all. Maybe it looks good but i will not buy something like this.

Definitely i wouldnt try the food ideas from that video.

I cannot answer I like or I don`t like, I would rather say that I almost never experiment. Thus, better to say that I prefer traditional dishes.

I think that is something impressive, innovative, these are revolutionary ideas that could bring benefits to our enviroment. There will be less meat consumed and this food seems to be healthy.

I would really like to try their hamburgers and nachos:) Actually anything what they cook, I am sure it is extremely tasty and these substitutes are not worse than real products and may be the way better. I am very curious and hopefully one day will try something like that.

I like experimenting with food but up to a certain degree. For example, such experiments that were mentioned in the video are okay for me. But I don`t want to taste any bugs or something like century eggs.

It depends on what do you mean under "modern cuisine". If it is about
molecular cuisine, I have never had an opportunity to taste it, but I want to do this. It looks very interesting and beautiful, like some kind of art.

I think I can try every dish mentioned in the video cause I did not feel disgusted. But the dessert from nachos was the most appetizing for me. I remembered another dessert from one restaurant, which was looked like an inverted flowerpot.

The question has already come up this week. I don't like to express myself in the kitchen. I try to eat little processed food. But I don't have time for experimentation. That's why I'm trying to make one saturated dish. I often buy myself food. Such a catering company buys huge amounts of food at wholesale prices, so they are really cheap. At my place in the city, two-course dinners together with a delivery cost 20 PLN. I really doubt whether cooking such a dinner by hand would cost less. Now I'm home a lot and cooking by myself. It seems to me that I spend more on food and at the same time I throw away more.

I have no opinion. For me, food is about needs, not art.

I don't think so. I don't have time for this kind of cooking.

1. As I don’t like to cook in general, I don’t enjoy experimenting with food while cooking. Nevertheless, I am open to new dishes and trying new things when I am at restaurants, especially when I know that it’s the specialty of the house.

2. I don’t think I have any specific opinion about modern cuisine as I don’t exactly get it, but I must admit I was fascinated with this video. I was intrigued with the idea, that it is possible to somehow trick our taste buds into thinking they are actually tasting gourmet food while it is something commonly accessible. It is fascinating that by providing the visual aspects of the dish alligned with expectations of the client even the “watermelon tuna” tastes for them as tuna.

3. I would love to try sweet and sour berries, as I am not a fan of sour dishes, but what is much more fascinating for me is this nacho dessert. The experiment of creating nacho-shaped candy, where everything looked exactly like it should and yet tasted exactly the opposite is fascinating. I am intrigued by it and wonder how my head would react to this “trickery”. I could try to even make it all by myself :D

It's a mix for me, I like to discover new cusines and dishes, but also I like what's familiar.
After a while I get bored of the food I know and eat often and try something new and vice versa, sometimes after an experimentation binge I come back to the classics.

2.
I get why modern cusine could be interesting for some people, but for me I don't see the apeal, it's more art than food.

3.
The nachos seem like would they would be really tasty, I like them and I like sweet dessert, so it's a safe combination.
1. From time to time i like to try something new, but i’m a little conservative when it comes to food.

2. I think that most of the cooking there happens in the lab and not in the kitchen.

3. Of course I would like to try it, but that's not my first priority.

I like to experiment in the kitchen. I also like traditional cuisine. I like something unusual, that's why I cost every kitchen.

Modern cuisine is intriguing. I didn't have the opportunity to try it too often, but when I tried it, it was ok.

Of course, I try to try all the dishes that someone has cooked. If someone has cooked, I will eat it. But as I wrote before, whether I like it or not is another matter.
1. I love experimenting with food. I even took this molecular cooking class with my mom once. We played with agar agar, which is a gelling substance, and we made carrot caviar! It was awesome. I sometimes use this trick at home, but it is way more time consuming than regular cooking...

2. I like the recent shift towards forgotten foods. For example the Topinambur, that was widely consumed in Poland for years, but at some point, potatoes pushed it out of the menus. Right now it's making a comeback. If you haven't tried it yet I really recommend it!

3. This tuna looks amazing! The burger patty could be tasty too. If I will ever be in Chicago I would make sure to visit their restaurant.

Actually, I like a little bit of both. I do like experiencing new flavors and exploring different tastes, but for me molecular cuisine is usually too complicated, overdone in a sense. My favorite part of discovering new foods is searching for their authenticity, e.g. when I travel I always try the typical, regional dishes and local flavors. Experimental cuisine may be an exciting adventure, but only once in a while.

2. What’s your opinion about modern cuisine?

I rarely eat at modern restaurants since I prefer big portions and spicy flavors. Usually, I just order in from Asian restaurants something like a pad thai or fried rice. Last time I visited an innovative modern restaurant, it was in Malta when I had sausage with goat cheese and raspberry jam while the main course was rabbit legs with cumin sauce which was supposedly a modern twist on the Maltese traditional dishes. I must say it was all excellent and definitely worth the hefty bill.

3. Would you like to try any of the presented in the video food ideas?

The ideas presented in the video seem extremely twisted, but I would maybe want to try the Cuban sandwich in the form of a cigar: that sounds really interesting. Also, I would like to do a blind tasting with a normal burger and their burger made from beets, barley and corn. I am really curious if I would taste the difference!
1. I like to experiment with food if I have the opportunity. As for traditional dishes, sometimes I feel like going back to
family home and eat something from mom :). For example, Christmas is a good opportunity to eat traditional dishes, which I think is great.
In the movie I saw two great chefs who are preparing something unusual and would love to try it.

It is tasty. I tend to prefer restaurants over fast food, although both can offer high quality food. Overall I am satisfied with the state of modern cuisine.

Some time maybe. If I find them on a menu in some cafe or restaurant.

It doesn't matter to me. I like traditional dishes but sometimes I love to try something different. If I like it I will eat it. Some dishes are delicious but visual they suggest that they taste horrible.

I think modern cuisine is very interesting. In the presented video there are many examples of modern food looking like traditional dishes. It’s amazing. We could try something different every day.

Maybe. I think I would taste some of them. If I like them then I will add them to my menu. The tuna prepared from watermelon looked delicious.

I prefer more traditional food over experiments. I sometimes try the more fancy ones, they usually taste good but almost always they're lack of something to change my preferences.

I don't have a strong opinion about modern cuisine. I think it works well as an addition to the traditional one, to add some variation in everyday food.

1. I love to experiment but also like traditional food- it gives me additional pleasure when it comes to knowing a new culture by the food it cooks.
2. I’m not a master chief, but I like it when people try to make something ‘new’ in the area that has been explored for thousands of years.

1. Do you like experimenting with food or do you prefer traditional dishes?

Usually, I am making some changes based on my knowledge in the kitchen to the recipes that I use. When I like the dish from the recipe I try to manipulate with the ingredients next time I create the dish.

2. What’s your opinion about modern cuisine?

I don't know anything about the modern trends in the cuisine. I just like experimenting with the food that I make and that is all. I rarely visit modern restaurants so I don't have that much information about it.

3. Would you like to try any of the presented in the video food ideas?

I mean, yeah for sure. I love trying something new and exploring the areas of culinary revolutions in my mouth. For me there are no restrictions. I don't care what you call it or how you mix it. You can throw them in a salad or crumble them up for pizza, and the best part is – it's delicious.

1. It depends on what the experimenting is. I like to experiment with different foods, but i have never tried to experiment with the way the dish looks, and i don't think i want to try.

2. I have really mixed feeling about modern cuisine. I really like to try out different places to eat, given that they are affordable. What i don't like is eating in the expensive restaurants. Sure, the food there is great, but i don't like the fact that you are paying not only for food, but also for the way it is served to you.

3. Not really, none of them looked really interesting to me.

1. I'm not a great cook so most of the time I hold on to the recipes I find online.

2. I really liked what they said about modern and future cooking. I think it's very important to look closely what is good for us and for the planet as well. Some of those dishes also looked like works of art, so if that is what modern cuisine looks like then I am in!

3. I would like to try those dishes, but I don't think I would be capable of cooking them by myself.

I prefer traditional dishes and I do not like experiments, I am faithful to Italian and Polish cuisine.
I don't like modern cuisine, I think it's better to base on good old cuisine, but only use good quality ingredients.
I always think it's worth trying something new, I'm open to new tastes, maybe I'll change my mind.

1. It depends on the meaning of word "food" in the sentence. Cooking? No, I prefer not to cook at all and I should do everything in the way I already know, when I cook. Better for everyone who will taste it.

2. Once more, depends on meaning of word "modern". Cause everyday food is also modern from one side. If it means something like molecular, I think it's great that we still can find something new in the world of food after all these years. It's nice to think that there can be no limits in any sphere if you have enough imagination. Unfortunately, I haven't yet tasted it, but I definetely will.

3. All of them. Especially if someone will pay for me. It isn't usually cheap, is it? But yeah, it's very interesting to cheat your taste and experience in food.

Ohh why do you feel disgusted? It's just food presented in way that differ than our "normal" definition. Maybe some day you will change your mind and open a little bit just to try something new!

I like to try new things, very often in fancy restaurants I'm trying to taste new things.

It is great and so complex, right now I think it is imposibble to even try all dishes in the world as even normal pasta can be made in so many ways. Even when I cook, I'm trying to get something new, mixing some spices to get new experience.

Ohh c'mon, try something new! Traditional cusine is amazing, but you can learn a lot by trying new things! I'm so glad that somebody sees the enviromental benefits - lower meat consumption is something I'd reccomend for almost everyone

Thank you for a very interesting topic. The dishes presented in the presentation look really amazing.
I do like experimenting with food. But more in the sense of learning about flavors and recipes from different regions of the world, and not creating dishes from scratch.
The dessert that looks like tacos and watermelon tuna from the presentation made a very big impression on me.

2. What’s your opinion about modern cuisine?
I strongly support the creation of vegetarian meat replacement „real meat”.
It is a fairly new trend. Even Burger King has introduced a burger that tastes like beef but with zero beef content.

Cultured meat is another very interesting idea.
Cultured meat is meat produced by in vitro cell culture of animal cells, instead of from slaughtered animals.
The initial cost of such an invention was 250,000 euros for a steak.
Today it is 40 euros. The product is expected to hit the consumer market in 2021.

1. I do experiment quite often with replacing meat in my dishes but besides that I do prefer traditional meals.
2. I think that modern cousine mostly in restaurants is all about presentation, it has to be aesthetically pleasing for the guest and also taste good. Also, I think that now we mix different tastes from all around the world and we create dishes that can be prepared almost in every restaurant in every city in the world.
3. For shure, all of them looked or sounded amazing but my personal favorite witch I haven’t tried was sweet nachos made of fruits and chocolate

I really like food experiments - especially morecular cuisine is really catchy to me. Traditional dishes are great - I like this a lot and this is kind of my young time taste memories however for now they are a little bit boring for me.

I like experimenting with food, but my experiments are far more prosaic then those made by the TED talk speakers.

2. What’s your opinion about modern cuisine?
I like variety of tastes we can choose from. In cuisine it looks like we live in a "global village" more than anytime before.

Try to eat or to cook? Speaking about trying – sure, I'm curious about the complete experience of it, but also I wonder about health values of food processed in such extent.
1.I really like to experiment in the kitchen and try new flavors. I get bored quickly with ordinary food and I look for news to refresh the taste and not feel the monotony in cooking.
2.Personally, I think that modern cuisine is something new and interesting. The taste combinations are certainly more original than in traditional cuisine. In this case, what matters is the fusion of flavors. The only downside of modern cuisine is small portions.
3.I'd love to try the nachos that were prepared as a sweet dish. I think I'd expect a salty taste in my head, and when I find out that this is dessert, the taste would be more intense.

Week 12 (12.01-18.01.15) Are you an early bird or a night owl ?

Owls are nocturnal creatures. They’re wide awake at night and they sleep during the day. If this sounds like bliss to you, then, like about 20 percent of the population who find themselves most active at around 9 pm, you may fall into the same category as our feathered friend. Night owls often have difficulty waking up in the morning, and like to be up late at night.  Studies of animal behaviour indicate that being a night owl may actually be built into some people’s genes. This would explain why those late-to-bed, late-to-rise people find it so difficult to change their behaviour. The trouble for night owls is that they just have to be at places such as work and school far too early. This is when the alarm clock becomes the night owl’s most important survival tool. Experts say that one way for a night owl to beat their dependence on their alarm clocks is to sleep with the curtains open. The Theory is that if they do so, the morning sunlight will awaken them gently and naturally.
