Week 8 [21.05-27.05.2018] Cervesario


Have you ever heard about „cervesario” term? Cervesario is equivalent to somelier but he’s an expert, kiper about beer. There are many aspects that cervesario assesses like variety types of beer, it’s smell, taste, hue, clarity, flavor etc. He has a deep knowlegde how do drink beer, which temperaturę is the best for each type. What do you think? How many certificated experts are in Poland right now? Maybe 100? Nothing more wrong… It’s about 24 cervesarios. But why it’s so hard to get certification? There are 56 sorts of beer, thousands brands and one brand has few propositions of one sort. Let’s imagine how hard is to get knowledge about each of them. In this article I’ll try to describe few, well known types of beer like, IPA, Stout, Bock or Lager. One you have to know is Billing’s Scale (Blg) – it’a scale of sugar content in solution.

1)      IPA style
India Pale Ale (extract: 12,2 – 18 Blg, alcohol: 5 – 7,5%)
Imerial India Pale Ale (extract: 16,8 – 21,5 Blg, alcohol: 7,5 – 10%)

This style is tightly associated with British colony. It has a golden or copper hue with little orange. Highly filtered with clear hoppy bitterness.

2)      Lager
Standard Lager „soft” (extract: 7,5 – 10 Blg, alcohol: 3,2 – 4,2%)
Euro Pale Lager „deep” (extract: 10,1 – 13,8 Blg, alcohol: 4,7 – 6%)
Euro Strong Lager „strong” (extract: 13,1 – 20,1 Blg, alcohol: 6 – 10%)

Bright Lager is the most popular sort in the World. Alcohol content is the main reason of triple division. This type of beer has a bright hue, golden or amber color. Characterised by not so dense foam.

3)      Witbeir
Witbier/Wit/Blanche (extract: 11 – 12,9 Blg, alcohol: 4,5 – 5,5%)

Special kind of wheat beer. Little hazy, amber or orange color with spicy flavour.

4)      Lambic
Lambic (extract: 9,8 – 13,1 Blg, alcohol: 5 – 6,5%)
Gueuze (extract: 9,8 – 14,5 Blg, alcohol: 5 – 8%)
Faro (extract: 9,8 – 14,5 Blg, alcohol: 5 – 8%)

Special yeast strain gives to this beer uniquse tase. We can feel strong, furity taste. This style is brewed like Witbier type.

I think I tried most of them, only those last ones seem a bit mysterious to me, maybe I tried them, but not consciously. I know a few people that interest in beer and I guess that one of them could be a cervesario. He read books about beer and is really passionate about it, so I think he could be one. I know also American Pale Ale which I like, Porter, Pilzner. Nothing more comes to my mind in this moment. ;)

Last summer I worked in a restaurant where most of the beers were, so I had the opportunity to try it out.
I think I have never met a cervario, although I would like to ask a few questions. I only know people who drink a lot of beer ;P
I am not a big beer specialist, but I think Pilzner is another kind of beer.

I have tried IPA, Lager and Witbier. I strongly dislike IPA because of its bitter taste and Witbier is by far my favorite kind of beer.
I don't know anyone who would be a good cervesario material, me and my friends mostly use cheap lagers.
I know for example Porters which vary a lot in their taste but are generally tasty for me.

I have never tried this kind of beer. Now I like very much all kinds of "Ksiazece" But I drink beer very rarely. I like craft beer too. Some time ago my friend made beer. This was his first time and it was very very good beer. I think that in near future he will be master of making beer. Of course I will be the first tester.

1. Yes I have tried all of them. My favorite by far is the family of IPAs and Stouts, they have largest variety of tastes, texture and I also Iove their strong bitterness.
2. I know some people who are very passionate about beers and have very in-depth knowledge. However they usually treat it as a hobby and want to focus on their own experiences rather than general rating (It is a very hard topic!)
3. Haha, I know a bit too much to post it in this comment. I’m a beer geek and love to explore different beer styles. Moreover there are very different interpretations of those styles coming from various countries, so that complicates things even more.

There were times when I could call myself "beer geek", so yes - I've tried all the styles from the list. I would say Tomasz Kopyra could be named as cervesario. He's one of the polish beer gurus. For those who don't know him, I recommend his YouTube channel.

Porters, Russian Imperial Stouts, Barley Wines - these are my favorite, but I wouldn't recommend them to those who are just starting the beer journey.

I have tried two, maybe three kinds of beers mentioned in the article. I'm not a fan of beers really, there are some types of alcohol which suit me much better. When it comes to beers, I just have some favourite ones which are always easy to find everywhere.
I know a couple of people which could become a cervesario. I don't fully get their enthusiasm toward beer, but I don't have to. Being one requires a lot of time and effort, so I guess that most of them wouldn't spend it on actually becoming one. Maybe I am wrong?
I'm not really good at naming types of beers. My favourite type is Lager, but aside of that the only one I can think of is Porter, which I am not the biggest fan of.
I have never tried those kinds of beer, but after this article i want to try it. You must have a qualification to notice the difference between any sort of beer and to keep up the knowledge you want to show. I think that every "premium" pub in every city has their own cervesarios but i'm not sure. Definitely my grandpa can be cervesario :) I'm not a fan of drinking and i'm not a fan of beer, but maybe in future i would like to get more knowledge about it.

I have tried IPA and Lager. Before that I thought that every beers tastes the same. It was very staggering situation when my friend led me to "Pijalnia wódki i piwa" in Warsaw. I have a few friends who are interests in beer topic. It's something magic for me but they are making their own beers. It's very hard to make good ale but I have tried their products and it was very tasty. Maybe porters is one type which you didn't mention?

Yes, I did, IPA was my favorite. Mostly all my friends may become a "cervesario" of cheep beer. I know, but since this February I stopped drinking and I absolutely forgot all other sorts of beer. Please don;t make me google it <3

I have tried most of them because I am fan of a beer and I really like to try new tastes. I really like a IPA because it is really refreshing beer and it it the best option for me during friday evening when temperature is higher than 20 degrees Celsius.

2) Do you know somebody how could be cervesario?

Now I am concious how hard is to be a cervasario and for sure I don't have any firends who could be a cervasario.

3) Do you know any other sorts of beer?

I know e.g. a "porter" but I don't like this type of beer. It is too heavy and I don't feel pleasure of drinking it.

Yes, I've tried all of them. I'm kinda 'craft beer' guy. From the given examples, IPA's are my favorites.

APA, Stout, Porter. Stouts are my favorite ones ;).

I like beer because it isn't sweet and I'm not the fan of the sweet drinks. I have tried all the types mentioned above except the last one. Or maybe I just don't know I have tried it:) In summer I prefers lagers or Corona with lime, is it lager btw? Sometimes I am in a mood of IPA or APA, I used to like it very much, but that bitterness.. I hate witbier beacause of the spicy smell, but if it's fruity I could drink it, but IPA is still better. I have heard about cervesarios, but unfortunately I didn't have a pleasure to meet some. A few days ago I have watched a short YouTube video about how to pour the beer in a professional way and we were trying to train it, but it wasn't a great succes. But we will keep on trying, summer is coming:)

I have one person in mind, but most of my friends don't bother a lot about quality of alcohol.

I tried all these types of beer. I like trying new types of beers and already two rimes attending Warsaw beer festival. I found out this world of different beers once was working in a restaurant and my colleague educates me about what kind of beers this restaurant is serving.
I knew one person that is new a lot about beer but not sure that he could be a cervesario and not sure if he even would like to such.
I believe the big category of beers which you don’t describe is porters and stouts. As far as I know, Poland is known with porters in beer community.

Yes, I like trying new kinds of beers, but I often forget what I've drunk tho. From what you presented today, I had this chance to try IPA, Lager, Witbier and I am very interested about this Faro beer right now!

2) Do you know somebody how could be cervesario?
Yes, I have this one friend who's walking beer encyclopedia and when I am sure he can't surprise me anymore, he does. Last time when we were buying some kraft beers, he had this super long conversation with the shopkeeper, so I had to step in and finish it, because I was just waiting too long.

3) Do you know any other sorts of beer?
I know many of them, but I want to give a special credit to the sour beers - it is my biggest discovery for past few months. If you didn't already try them, it is totally worth it!

Because I don’t like bitter tasted beer, I mostly drink Lager or Pilsner, but I have also tasted IPA, Stout and black beer and I think most kinds of beer that there is.
In my life I have never met a person who can be cerversario, it doesn’t matter that you drink a lot or read articles about beer, to be a sommelier, you need to taste it without drinking, determine it with just a smell, so nobody I know is qualified to be a cerversario.
I mostly drink Lager, or “another type” of beer Pilsner, but I also know most of Ale types, from Old Ale, Amber Ale, British Ale and others, also Irish Stout, Porter and Cider.
I hate beer and I don't want even to talk about it but I love another similar type of light alcohol called Cydr and Ale and I think it much more better than beer.

Bear has bad taste for me and I always prefer not to drink instead of drink beer.
Yes, I tried IPA and Lager. I 've never heard about those two mentioned after ( maybe I do drunk them but not really sure of its origin). I do know person who is in love with crafted beers, it is his hobby and he's trying to learn as much as possible about a beer before drkining it. I think he could be cervesario in some point, but to become one you should sacrifice other duties (In other way you would come to work drunk every time :D ). I don't know its names but I think there are plenty of types of beers, I've tried some of the crafted ones but I don't remember theirs genres.

I don't think so that I know someone who could be cervesario but lot's of my friends are craft beer fans.

Of course I've tried them! I really like American Pale Ales and Lagers.

I have few friends, who are experts in craft beers. They can talk about beer, how it is made and differences between them for hours. It is very interesting to hear such conversations.

Other sorts of beer? Probably Porter, APA, Stouts

I'm abstinent so I don't drink beer. I tried some beers but it was long time ago and I don't remember what it was.

I know one man who love beers. But I don't think so that he thinks about it in that way.

I don't know any sorts of beer but i've heard about kind of beer from Rwanda. It was make from bananas and i've heard it's great.

3)I dont know the name, but i remember a pub where you can find tasty and cool beers)
I tried beer only once. It was draft beer, for me it seemed bitter and absolutely not tasty. The next day I got food poisoning (most likely from the beer I tried) so after this case I never drink beer)

I’m a person that doesn’t drink alcohol, so for me it’s a very strange topic – I find beer disgusting, and so I’ve never really tried any kind of it, mostly because the taste is way too bitter and intensive. I do not know anyone who could be a cervesario personally, but I think that heads of the biggest Breweries in Poland could do well in this profession – after all, Poles drink a lot of beer, and people who produce it should have extensive knowledge about the product that hey manufacture and sell. As an abstinent, I don’t know any other kinds of beer by taste, but I’ve heard of some, like English Ale or wheat beer. Nonetheless, I will probably never start drinking beer, because I simply don’t like it.
